Cole Slaw I Don't Hate

I hate Cole Slaw.  But, I'll eat this.  I don't know why.  It's a magic, light combination of tangy, not too creamy deliciousness.  I'm also a cabbage whore.  So there's that.

I think I hate Cole Slaw because of Wal-Mart.  They sell Cole Slaw that is really just Mayonnaise with specs of cabbage and carrots.  It's disgusting.

Instructions: Cut up a small head of cabbage into strips and chunks.  Shred Carrots.  You can also make your life easier by buying the pre-shredded of both.  Set aside.

In a separate bowl, combine all the dressing ingredients and stir with a whisk.  If it's not tangy enough, add more vinegar.  Salt and pepper to taste.  This is easy.

Green Cabbage, shredded 1 small
Carrots, Shredded 2 each
Dressing:
Mayonnaise 3/8 cup
Light Sour Cream 1/4 cup
Green Onion, finely chopped 1 ea
Sugar 2 TBS
Vinegar 2 TBS
Mustard Seed, ground 1.5 tsp
Celery Seed, ground 1.5 tsp
Sea Salt & Ground Pepper to taste

Tips: Make Sure everything is fresh.  Fresh ingredients, freshly ground Seeds, not store canned ones.

Low-Fat Options: You can definitely try a low-fat mayo.
